Shrimp Avocado Toast

This modern take on avocado toast layers creamy avocado, crisp radish, and fresh herbs with seasoned plant-based shrimp. Light yet satisfying, it works as a trendy brunch item, appetizer, or small plate.

Equipment Needed

Knife • Cutting board • Mandolin • Skillet • Tongs • Mixing bowls • Gas or electric burner • Measuring spoons and cups

Ingredients

Yield: 4 portions (4 slices of toast) 

4 large slices sourdough bread

3 tablespoons olive oil (for toasting bread)

12 ounces Bayou Best Plant-Based Shrimp

¼ teaspoon salt and pepper

1 tablespoon extra virgin olive oil

2 tablespoons chives, sliced thin

2 avocados

1 lemon

3 radishes, sliced thin or cut into matchsticks

⅓ cup microgreens or fresh herbs

Yield: 25 portions (25 slices of toast) 

25 large slices sourdough bread

1 cup + 2 tablespoons olive oil (for toasting bread)

4 pounds 12 ounces Bayou Best Plant-Based Shrimp

2 teaspoons salt and pepper

½ cup extra virgin olive oil

¾ cup chives, sliced thin

13 avocados

6 lemons

18 radishes, sliced thin or cut into matchsticks

2 cups microgreens or fresh herbs

Directions

1. Toast the Bread

Heat a skillet over medium heat. Add olive oil, then toast sourdough slices on both sides until lightly golden. Set aside.

2. Cook the Shrimp

Season shrimp with salt and pepper. In the skillet, heat a drizzle of olive oil and sauté shrimp for about 3 minutes until lightly browned. Remove and set aside.

3. Marinate the Shrimp

Place shrimp in a bowl. Drizzle with extra virgin olive oil, juice of half a lemon, and chives. Toss to coat.

4. Prepare the Avocado

Slice avocados thinly or smash to desired consistency. Fan slices or spread onto toast. Drizzle with juice from the remaining lemon to season and prevent browning.

5. Assemble the Toasts

Top avocado with shrimp and radish slices. Drizzle with a touch more olive oil.

6. Garnish and Serve

Finish with microgreens or fresh herbs. Serve immediately.
