Coconut Fried Shrimp

Crispy and golden, these coconut-coated shrimp deliver a crunchy bite with a hint of sweetness. They shine when accompanied by a mango chutney dipping sauce, adding a tropical touch to any menu.

Equipment Needed

Knife • Cutting board • Saucepan or fryer • Whisk • Skillets • Tongs • Mixing bowls • Gas or electric burner • Spider strainer or fry baskets • Measuring spoons and cups

Ingredients

Yield: 4 portions (about 12 pieces) 

½ teaspoon salt and pepper

½ teaspoon garlic powder

½ cup flour

6 tablespoons JUST Egg (replaces 2 eggs)

¼ cup water

2 cups panko breadcrumbs

1 cup sweet shredded coconut

12 ounces Bayou Best Plant-Based Shrimp (about 16 pieces)

2 quarts frying oil

1 teaspoon iodized salt

Yield: 25 portions (about 75 pieces of shrimp) 

2 tablespoons + ½ teaspoon salt and pepper

2 tablespoons + ½ teaspoon garlic powder

3 cups flour

1 ½ cups JUST Egg (replaces 12 eggs)

1 ½ cups water

3 quarts panko breadcrumbs

1 quart + 2 cups sweet shredded coconut

5 pounds Bayou Best Plant-Based Shrimp (about 110 pieces)

1 gallon frying oil

2 tablespoons iodized salt

 

Directions

1. Make the Batter

In a bowl, combine salt, pepper, garlic powder, flour, JUST Egg, and water into a loose batter. Let sit for 10 minutes.

2. Prepare the Breading

Mix panko breadcrumbs and shredded coconut in a separate bowl.

3. Coat the Shrimp

Whisk the batter again. Lightly dredge the shrimp in the batter, then press firmly into the breadcrumb-coconut mixture.

4. Freeze the Shrimp

Place coated shrimp on a parchment-lined tray. Freeze for 10 minutes to firm the breading. (Shrimp can also be fully frozen and stored for later use.)

5. Heat the Oil

Preheat oil to 325°F in a fryer or deep skillet.

6. Fry the Shrimp

Carefully fry shrimp for 3–4 minutes, until golden brown. Drain well and season with salt.

7. Serve

Serve hot with cilantro sauce, sweet chili sauce, or mango chutney.
