Spicy Cilantro Sauce
This creamy sauce blends fresh cilantro, jalapeño, lime, and spices into a zesty, cooling condiment with just the right kick. Perfect for our Baja Shrimp Tacos, it adds a refreshing, savory flavor to the dish.
Equipment Needed
Knife • Cutting board • Measuring spoons and cups • Blender or immersion blender
Ingredients
Yield: 4 portions (7 ounces, about ¾ cup)
½ cup plant-based sour cream
½ cup plant-based mayonnaise
1 jalapeño, chopped, seeds removed
2 cloves garlic
1 cup (about 1 oz) cilantro, loosely packed
½ teaspoon cumin
Juice of 1 lime
1 teaspoon red wine vinegar
½ teaspoon sugar
½ teaspoon salt and pepper
Yield: 25 portions (24 ounces, about 3 cups)
2 cups plant-based sour cream
2 cups plant-based mayonnaise
4–5 jalapeños, chopped, seeds removed
3 tablespoons garlic (about 9–10 cloves)
1 quart cilantro (about 3 ½ oz), loosely packed
1 tablespoon cumin
Juice of 4–5 limes
2 tablespoons red wine vinegar
1 tablespoon sugar
1 tablespoon salt and pepper
Directions
1. Prep the Ingredients
Chop jalapeños, peel garlic, and roughly chop cilantro. Juice the lime(s).
2. Blend the Sauce
Place all ingredients into a blender or use an immersion blender. Pulse until smooth and creamy.
3. Chill Before Serving
Transfer to a container and refrigerate until ready to serve.
